INGREDIENTS
(2 Servings)
2 medium sweet potatoes
1 tsp of coconut oil
1 small yellow onion, diced
224 g of ground beef
1 celery stalk, diced
1 carrot, sliced
1 zucchini, cubed
1 cup of diced tomatoes
2 tbsp chilli seasoning

INSTRUCTIONS
- Preheat the oven to 400°F/200°C.
- Use a fork to create numerous holes in the sweet potatoes.
- Place the sweet potatoes on a baking sheet with parchment paper and bake for 45 minutes.
- While the potatos are getting baked, place a pot on the stove top on medium heat and add the coconut oil.
- Once the oil has melted add the onions and ground beef, and cook through.
- Once the beef is well cooked, add in the celery, carrot, zucchini and cook for another 5 minutes.
- Next add in the diced tomatoes and chilli seasoning.
- Bring the chili to a boil and then lower to a simmer until the sweet potatoes are done.
- Once the potatoes are done, split them in half and fill them with the chili.
