INGREDIENTS

1 cup of dry basmati rice
240 g of chicken breast, cubed
1 zucchini, sliced
1 green bell pepper,
1 red onion,
2 mushrooms
3 tbsp lime juice
1 tsp of honey
1 tsp smoked paprika
1/2 tsp chili powder
1/2 tsp of salt

INSTRUCTIONS
- Soak the wooden skewers in water for 30 minutes.
- Preheat the oven to 400F°/200C°.
- Prepare the chicken and vegetables by slicing everything into bite sizes.
- Once the wooden skewers are ready, assemble the skewers by alternating between each ingredients.
- In a small bowl, combine the lime juice, honey, paprika, chilli powder and salt.
- Coat the skewers with the chilli lime seasoning.
- Place the skewers on a baking sheet with parchment paper and bake for 25 minutes, flipping them half way.
- In the meantime, prepare the rice by combining the rice and two cup of water in a pot.
- Bring the pot to a boil, then reduce the heat to low, and cover for 12 minutes.
- Plate the rice and skewers together.
