Chicken Pesto Pasta Recipe

INGREDIENTS

240 g of chicken breast
112 g of brown rice pasta
1 cup of cherry tomatoes, halves
1/2 cup of pesto

INSTRUCTIONS

  1. Preheat the oven to 400F°/200C°.
  2. Bake the chicken breast for 25 minutes.
  3. Meanwhile, bring 6 cups of water in a pot to boil.
  4. Once the water is boiling add in the pasta.
  5. Once the pasta is done, strain it and transfer it to a large bowl.
  6. Add the pesto sauce and the cherry tomato halves.
  7. Once the chicken is done, either shred it with a fork or diced it
    and add it to the pasta.
  8. Serve with fresh basil if desired.
